Apple Season

Fall is more than Pumpkin Spice everything. It is also the beginning of apple season! I love apple season. So many delicious varieties available. We love apples. My daughter and husband’s favorite are “Jazz Apples”, but when it comes to making dessert, Honey Crisp apples are king.

 

Goodie Girl Oatmeal Raisin Cookies

When I received Goodie Girl’s Oatmeal Raisin Cookies, I couldn’t help but think they would be perfect for a gluten free apple crisp. The cookies have the perfect combo of oats, cinnamon, and raisins. A little bit chewy and little bit crispy, they have a great texture.

As I was preparing to make an apple crisp, I remembered my husband and I’s first Valentine’s Day. He made an amazing dinner (risotto, asparagus, and salmon!) and for dessert, he made stuffed apples. Coring and filling Honey Crisp apples with cookies, then baking them. They were so delicious. I have been wanting to recreate them but hadn’t found the perfect cookie, until now.

Goodie Girl Oatmeal Raisin Cookies make the perfect filling. Combined with brown sugar and butter, the cookie filling oozes out its own caramel as it bakes. It is to die for.

Inside out gluten free apple crisp is so easy to make. You can make it for one, two, or the whole neighborhood! There are just three basic steps.

Core the apples

I used a kitchen aid carrot peeler because I did not have an apple corer. Once I got the core out, I used a little spoon to scoop out the inside. Be sure to save the inside pieces from the apple. They will need to be chopped up and combined with the filling.

Fill the apples

Combine the cookies, brown sugar, melted butter, and pieces of apple. Stuff it into the apple and pack it down. You should already see some of the brown sugar and butter mixture starting to spill over.

Bake and admire your fancy looking dessert

As the apples bake, the juice from the apple combines with the sugar and butter, oozing out and creating a luscious caramel that can be spooned over the apples when they are served. It is such a simple dessert, but so pretty, your guests will be impressed.

Inside out gluten free apple crisp is one of my favorite desserts.

Ingredients

  • 4 Honey Crisp (or other large) apples
  • 8 Tablespoons brown sugar
  • 4 Tablespoon butter
  • 4 Oatmeal Raisin Cookies, crumbled

Instructions

  1. Core apples. Throw out core.
  2. Scoop out inside of apple. Save apple pieces.
  3. Melt butter.
  4. Combine brown sugar, melted butter, apple pieces and crumbled oatmeal cookies.
  5. Stuff into apples. Press down. Some of the butter/sugar mixture will come out.
  6. Bake at 350 for 25 to 30 minutes.
  7. Move apples to serving platter and pour caramel from dish over them.
