My families favorite gluten free chocolate “chip” cookies are Goodie Girl Chocolate Chunk. They are gluten free (yay for me!), but over that, my family just loves them. My daughter?s eyes light up like a Christmas tree whenever I pull out one of their go packs for a special snack. I watched my husband bypass a ton of goodies I got from the South Beach Food and Wine Festival for these chocolate chip cookies.
My little family would eat the Gluten Free Goodie Girl? Chocolate Chunk Cookies for breakfast, lunch, and dinner, so I thought, why not come up with a fun way that they can eat cookies for breakfast? Making this Cookie Crusted French Toast has been a huge hit!
Making Gluten Free Cookie Crusted French Toast is a lot easier than you think. It is a basic gluten free French Toast recipe, and you press the gluten free bread into smashed cookie crumbs.
There is a trick to it, though:
Instead of cooking it in a pan, bake it on a cooling rack in the oven.?
If you try to cook it in a pan, you run the risk of all the chocolate chips burning before the egg soaked gluten free bread is cooked.
This is also a fun recipe to get the kids involved. My daughter loved helping crush the cookies. I put them in a Ziploc, gave her one of her play hammers and let her go at it. It?s always great when you can get the kids involved in cooking.
